The a/c in my cheese shop shut down

I tried turning it back on, but it would not allow me to bring the temperature below 80 degrees

I am the owner of a famous cheese shop located in a populated town in the northeast. When my parents started our cheese business several years ago, they did not expect it to take off and expand the way that it did, and to say our cheese shop is popular would be an understatement, but it is common to have lines out the door on a daily basis. It is essential that our air conditioning works, even during the winter. The reason is we keep aged cheeses in stock that give off a distinct odor. To the cheese lover, this may be a wonderful odor but to many people it is not, keeping the air conditioning on and the cheese refrigerated helps the cheese stay fresh and the smell within a manageable range. We have central air conditioning in our store and we have been working with the same local Heating and A/C business for several years. We have not had many problems with our air conditioning, until Last year which was one of our worst days at work. It was a Saturday, which means our store was super busy. The line was out the door, the phones were ringing non stop, and customers seemed to have more questions than usual. I started covered in sweat, but at first I chalked it up to the nerves from the rush of customers. Then I noticed the customers and our staff inside were also covered in sweat and using their hands as fans. I walked over to the thermostat and noticed it was off. I tried turning it back on, but it would not allow me to bring the temperature below 80 degrees. It was a hot summer day, and 80 degrees was not going to cut it. I called our local Heating and A/C professional instantly.
